The Peninsula Chicago is making our mouths JUICY with their announcement of new Executive Pastry Chef Hsing Chen! And Chef Chen is a BIG DEAL: not only is she an Emmy award-winning journalist (SAY WHAT?!), she also has worked at some of the leading kitchens in the country, opened her own boutique patisserie Sweet Chick, AND was featured in New York Magazine. Celeb-status. She knows her stuff and it looks like we’re definitely in for a treat. She has also worked at the Peninsula New York as Executive Pastry Chef, so she’s going to fit right in here in at The Peninsula Chicago!

Kristine Subido Leaves Wave, to Opening Pecking Order. Inside Below

Kristine Subido’s last day as executive chef at Wave is April 15 – after that she plans on opening her own (and first) restaurant, Pecking Order: A Chicken House.  Subido has over 10 years with Cornerstone Restaurant Group, but is looking to pursue both her and her mother’s dream of owning their own place. Pecking Order’s exact location has not been released, but buzz is that it will be near Clark/Montrose in Uptown and opening early this summer. Look for chicken in the traditional Filipino style (soy, vinegar, sugar, garlic) – she’ll be incorporating the family recipe in this new fast-casual spot with the check ranging from $9-$20. A STEAL for some amazing home cooking!

Confirmed: sweetie Chef Jackie Shen has left the executive chef position at one of our faves we crave Chicago Cut Steakhouse. We got to seeChef Shen at work behind the scenes at our exclusive kitchen insider look – so much JUICE. Shen has been big on the Chicago culinary scene since the 80s and 90s, at her own Jackie’s, and Red Light. No word on who will be her replacement or where Shen is moving on to. So much food porn goodness from Chef Shen at Chicago Cut we keep wanting to relive. And it is official that Russell Kook will be replacing Shen as Executive Chef effective immediately. Kook is notably known for opening the celebrated Florentine restaurant at the JW Marriott, but this born and raised Midwesterner also has celeb status: you might have seen him on Iron Chef or Hell’s Kitchen in the past. LOVE IT. Can’t wait to see what Chef Kook brings to the table. WE WANT FOOD PORN.
